Indonesian Nasi Goreng (Sambal Stir Fried Rice) Serves 4
* 1 packet Indonesian Sambal Stir Fried Rice
Spice Paste
* 2-3 tbsp vegetable oil
* 250g (1/2 lb) shelled prawns
* 2 eggs, beaten
* 600g (3 cups) cooked rice
* 2 tomatoes, cut into eighths
* Chopped coriander and red chilies, thinly sliced
as garnish
1. Heat oil in a non-stick wok on medium-high heat.
Add prawns and stir fry for 2-3 minutes.
2. Push the prawns to one side. Add eggs and cook
for 1 minute. Add rice and Spice Paste, stir fry
for 3 minutes.
3. Add tomatoes and stir fry for 1 minute or until hot.
Garnish and serve hot.
Variations: Beef, lamb or chicken may be used
instead of prawns.
